This also applies to the choice of the structure that works with respect for the environment with a zero-emission project or the plastic-free choice. Even the raw material is a topic that is worth addressing: we move from certificates (think of Friend of the Sea, an internationally recognized sustainable fishing program) to the zero waste philosophy, that is, the idea of reducing waste to zero. Not only that: the Michelin guide itself, which has been operating since 1962, has started the “Green Clover” project, where clubs and restaurants are evaluated according to some sustainability criteria: the stars are thus replaced by four-leaf clovers.
